The Bread course included Chef Josh Boutwood&rsquo;s signature sourdough and brioche duo paired with various butter spreads infused with truffle, seaweed, rendered pork fat, and beetroot. This was then followed by the Halibut, Roe, Celeriac&mdash;a rich serving of Atlantic halibut lightly steamed and paired with celery leaves and bergamot mint butter sauce.
The penultimate dish was the Wagyu, Tasty Paste, &Auml;ttika&mdash;a savory dish of Australian wagyu paired with a fermented vegetable paste and &auml;ttika gel in a turquoise hue reminiscent of IQOS&rsquo; brand color. The six-course menu ended with a sweet treat&mdash;a caramelized cream, and mint crisp, treating guests to a burst of sweet and fresh flavors.
